Anthriscus cerefolium Chervil

SE. Europe, S. Asia; 25cm
Planting position: Full sun to semi-shade. Areas with wind-protection.
Requires thorough, regular watering. Well-draining, organically-enriched soil. Spring application of complete fertiliser. Watch out for aphids.
Propagate from seeds.

This annual herb has saw-toothed, bright green anise-flavoured foliage, growing from the slightly hairy stem. The foliage changes to a pinkish colour with age. The umbels of summer flowers are white and followed by dark cumin-like seeds. Its many culinary uses include jams, preserves, decoration for cakes and flavouring stewed fruit and fish dishes. It has digestive- and stimulant properties and is a general tonic. Also used for treating flatulence, anaemia and bonchitis.
